Singapore: Eng's Noodle House

 

This was hands down, a bowl of life changing wanton noodles. Prior to this I've only tried Fei Fei's and Kok Kee at the previous Lavender Hawker Centre but found both rather meh. And the size of the wantons at the latter were laughable. 

Here everything seemed to work. The noodles were a springy texture and coated in an unctuous lardy sauce. Of course, free flow lard is available too. The char siew and dumplings were actually pretty decent but the clincher was actually the mother spicy chilli sauce that you can add at your own risk (but trust me you'll want to do so). Get the crispy deep fried wantons too and wash everything down with a cold glass of water chestnut drink.
